Friday night ‘in’ Fish n’ Chips
Inspired by our Japanese collaborators. Seared spiced Tuna cubes with Wasabi Crème.
Ingredients
Spice rub
1 teaspoon Chili powder
1 teaspoon Chilli flakes
Half teaspoon Ground black pepper
Half teaspoon mustard powder
2 tablespoons of white sesame seeds
1 teaspoons poppy seeds
1 tablespoon dried seaweed (aonori)
Wasabi Crème
2 egg yolks
2 tablespoons sour cream
200ml olive oil.
2 teaspoons of wasabi paste
Coat small cubes of sashimi tuna in a spice rub made of chilli, black pepper, mustard powder, dried seaweed, poppy and sesame seeds and sear in a hot pan. Serve in a paper cone with your choice of chips and wasabi creme of combined egg yolk, sour cream, olive oil and wasabi.
Old Fashioned
Ingredients
1 tablespoon smoked maple syrup
Whisky or Bourbon
Orange peel
Burnt cinnamon sticks
Splash of water to taste
Ice
Combine maple syrup, water and whisky to a rocks glass and and stir until syrup has dissolved. Add one large ice cube to glass and garnish with orange peel ice, and flaming cinnamon stick.
